Simply open the Xcode project in 'readium-sdk': https://github.com/readium/readium-sdk/tree/develop/Platform/Apple/ePub3.xcodeproj
Alternatively, you can build the iOS app from:
https://github.com/readium/SDKLauncher-iOS
