I'm having problems with PASSWORD_STORE_SIGNING_KEY and I'm just wondering if it was tested with a gpg-id that has embedded whitespace, e.g. "John Doe".

Can you provide more details? In wich context are you having problem? What problem do you have exactly?
pass-tomb does not handle PASSWORD_STORE_SIGNING_KEY directly, so it should not interfere with it.
