Latest release from 2021/quickstart instructions invalid

Following the Quickstart instructions will end up in a very frustrating experience (#32 #34 #33).
Most necessary fixes are in master, but the latest release is from 2021. In light of the current migration to extensions, I would suggest to polish this so that after generation, the initial commit just works, and then releasing a new version. Otherwise, the README quickstart command would have to be updated to pipx install git+https://github.com/saltstack/salt-extension to even have a chance of working.
