Sigstore prober resources are not configurable

See https://github.com/sigstore/helm-charts/blob/main/charts/sigstore-prober/templates/deployment.yaml#L37-L43, where the resources are hard-coded. Not a significant issue, but users may want to configure their own resource limits.
