ESP31 Device in sch needs value updated to ESP32

This'll be a little tricky for the prototype.
This first round of protos will actually be based around the ESP31B, which is all we have samples of for now (ESP32 won't be available until June at earliest). (I know silk and board name all say ESP32 - I'd like to keep it that way, just to make sure they look correct on the prototype.) This means we're assured a second prototype, but we can at least test out the ESP31B's supporting circuitry until we get the 32 in.
There's enough difference between the ESP32 and ESP31B that they need their own devices. The footprint is shared, but the fourth quadrant of pins are all swapped around.
I'm going to leave it as ESP31 (actually change it to ESP31B). I'll leave this issue open until the next round of prototypes.
This is still a thing on v02 but as long as we're leaving this open to be fixed in going to reds, we go for a second round of protos.
