Rename all function artifacts w/ a "spring-" prefix

Currently the name of the functions are somewhat ambiguous / generic (eg. aggregator-function).
Adding a prefix of "spring-" will help disambiguate the artifact id.
NOTE: Leave the version number as is (5.0.x).
