Add global value for metadata pvc configuration

Metadata persistence.existingClaim value should be configurable with global values.

No need for global value to configure it. Can be done by adding "metadata.persistence.existingClaim=<pvc_name>" to the helm installation command or manual configuration of the Memphis values file.
