Add New Projects/Change 'Project 1,etc' to 'Courses'

This is not so much an issue as it is a question on how its done. I'm newer to yml and html and using rstudio to render the site. I'm wanting to add more projects but seem to be capped at 8 and then changing the names on the html gets redone when the yml file is read again and I cant get the two to coordinate.

Was able to figure out through the past issues.
