[BUG] add secret management

I need some way to manage secrets in my configs :p

I think agenix seems like a good solution and I started adding it, but then didn't actually need the secrets anymore for the thing I was doing, but in the long term this would be a good idea.

added sops-nix. TODO expand what secrets I keep, but im closing this issue anyways for now
