I had an issue with the input volume very low with Home Assisant addon "Assist microphone".
I tested the mic with a laptop and it was clear and loud.
Then I get into the running docker container inside HA and ran alsamixer and tuned the mic volume up to 100% (it was around 30%) and got mutch better sound, testing in progress.
I think you may add an option to set the volume with "amixer" before start the "arecord" process.
