Minor modifications in relation to viva corrections

In order to update plots and extend figure some minor modifications are required to the codebase.

This may include:

• Updates to how confusion matrices are made
• Updates to how CAMs are drawn -- move out of notebooks into standalone files
• Be able to re-process raw plasticc data, ideally with polars end-to-end
