Base the image on official pandoc/latex image

Effort to keep this image updated should be reduced significantly by basing it on the official pandoc/latex image available from Docker hub.

Blocked on error (node:314) UnhandledPromiseRejectionWarning: Error: Failed to launch the browser process! spawn /usr/lib/node_modules/puppeteer/.local-chromium/linux-782078/chrome-linux/chrome ENOENT.

Analyzed chrome installed by puppeteer using readelf -l and realized it was using /lib64/ld-linux-x86-64.so.2 interpreter not available on Alpine. readelf is available in binutils package.

Switch to using chromium browser as described at Issue when deploying with node:8-alpine (docker).
