Remove extractor service from compose files

The extractor service is a part of the project and mentioned in the IaC logic, primarily the compose files.
Remove this section as it is no longer an active part of the project.

Deprioritized as ary-client and extractor services require setup of local development servers within the organization. Currently handled by noting the required changes in the docs. (Ref: #994)
