use `xarray`'s version of `DataTree`

At some point in the next few months, xarray will ship with a (slightly improved) version of DataTree, after which the xarray-datatree package will be deprecated / archived (and thus, abandoned).
To migrate, I believe the only thing to do is change the imports / package metadata / CI (but let's see).
