Variable fonts served from Google Fonts don't always work

Turns out sometimes a whole bunch of static fonts are served instead, because of various bugs (not documented outside the internal chambers of the Google, at this point) or for Windows because of hinting. So I'm not sure if self-hosting is a better option? Some quick superficial tests show that the font usually works fine.
@davelab6 Thoughts on this?
