I really hate the UI of 2023 very much.,Originally, all the UI about 2023 in the previous version was useless.,Only by giving up the sidebar function and turning off the sidebar can you go back to the previous UI.,But the latest version doesn't seem to even be able to do this.

Yes, the 124 version, like I said, can only turn off 2023UI by disabling the sidebar, and the latest version 125 not only can't disable 2023UI, but even the method of disabling the sidebar to turn off 2023UI is useless.
I doubt we can do anything about that.

Create a chrome.exe - Shortcut. Right click Go to properties of that shortcut.
You can append that in the "Target" field in the properties of the shortcut:
