Realsoing sorted list

I'm using the sortable plugin to allow users to pick and sort, but when I re-display a select for editing, it's in natural order. How can I get the sortable plugin to use my order and not natural order after a re-display?

The order should be persisted (i.e. in a DB) and used when building the <select>.
