v5: CAPI/Tag - Not all the recommended fields are sent to pinterest

Describe the bug:

List of recommended fields
https://developers.pinterest.com/docs/conversions/event/

Steps to reproduce:

Do adhoc testing against these events

Expected behavior:

All required and recommended fields are sent.

Actual behavior:

It is not sent event when clearly available.
e.g checkout: email and address etc not sent.
when user logged in the em is not sent

data should be sent to both CAPI and TAG

Additional details:

Please make a table and share which fields are not sent and why/when/how it would be sent for all recommended fields
