Move this repository to xarray-contrib

I think it's time to move this repository to the xarray-contrib organization. The goal with Xarray-simlab has always been to share it as a community project and not keep it as a personal project. Plus it becomes more and more mature (it's already 4 years old!) and it recently had some great contributions! Hopefully it will gain some more visibility in xarray-contrib.
