Create thanos service monitors

Details
Due to deploying thanos prior to kube-prometheus-stack the service monitor objects are not enabled. These need to be created and added to the repository, the templates can be found here: https://github.com/banzaicloud/banzai-charts/tree/master/thanos/templates
