[GUI] show which encodes we have for each source and which slices we have for each encode

It's currently impossible to tell (from the GUI) which videos have been processed. It would be nice to know what's been processed so we can prioritize those in case time is of the essence (e.g. live VJing)

I think this is a design problem and will will be a relatively heavy lift, so I'm gonna tackle it
