Ingredients:
- Potatoes
- Onions
- Eggs
- Extra-virgin olive oil and salt
Instructions:
- Slice potatoes and onions
- Slow-fry them in a pan with lots of oil
- Remove from fire, drain, and let them cool
- Crack and mix enough eggs in a bowl
- Add the potatoes and onions to the bowl
- Mix a bit and put back in the pan
- Once the egg is cooked, flip the omelette with a plate
- Repeat twice
- Done!
Notes:
- Do not overcook the eggs
- The pan needs almost no oil for cooking the eggs
