Spanish Omelette recipe

Ingredients:

  • Potatoes
  • Onions
  • Eggs
  • Extra-virgin olive oil and salt

Instructions:

  • Slice potatoes and onions
  • Slow-fry them in a pan with lots of oil
  • Remove from fire, drain, and let them cool
  • Crack and mix enough eggs in a bowl
  • Add the potatoes and onions to the bowl
  • Mix a bit and put back in the pan
  • Once the egg is cooked, flip the omelette with a plate
  • Repeat twice
  • Done!

Notes:

  • Do not overcook the eggs
  • The pan needs almost no oil for cooking the eggs
