This is the best freakin' chili I've ever had, in my entire life, ever. - Hullom
- 3 lbs beef chuck steak
- 2 lbs HOT Jimmy Dean Sausage
- 1/4 pounds of bacon
- 1 large yellow onion
- 4 poblano peppers
- 2 red bell peppers
- 2 (28 oz) cans diced tomatoes
- 1 (14 oz) can tomato paste
- 1 (7.5 oz) can chipotle peppers in adobo sauce
- 1/2 beer (Founders porter works well)
- 1/2 cup chili powder
- 3 tbsp worcestershire sauce
- 2 tbsp minced garlic
- 1 tbsp paprika
- 1 tbsp liquid smoke
- 1 tbsp dried oregano
- 1 tbsp dried basil
- 1 tbsp hot pepper sauce (tabasco chipotle)
- 4 teaspoons ground cumin
- Sour Cream
- Cheddar Cheese
- Kosher Salt
- Pepper
Wash your hands.
Cut Steak into 1 inch cubes, trim any excess fat. Smother in kosher salt and black pepper. Set to the side for at least 20 minutes.
Cook Sausage until well browned. strain well, add to crock pot.
Cook Steak in sausage grease, at medium to high temp, strain and stir frequently. When well browned, strain and add to crock pot.
Cook Bacon until crispy but not burnt, crumble and add to crock pot. Save bacon grease for veggies.
Remove the seeds from the peppers. Dice the onion, poblano, and red peppers into large chunks (1 inch). Cook in bacon grease until semi soft. You want to release some of the water, but you dont want them mushy. Strain really well, and add to crock pot.
Strain both cans of diced tomatos. Add diced tomatos and tomato paste to crock pot.
Puree whole can of Chipotle peppers with their sauce. In a bowl, mix together: beer, chipotle peppers, chili powder, worcestershire, garlic, paprika, liquid smoke, oregano, basil, hot sauce, and cumin. This should make a pretty thick mixture, put every last drop of this spicy goodness in the crockpot.
Stir all ingredients in the crock pot. Stroke beard and say things like: "mmmmm, CHILI...".
Cook on low for 2-3 hours. Stir occasionally. Finish off open beer.
Wash your nasty hands before you dip your dirty finger in the pot
Serve with sour cream and cheddar cheese.
