Move 'elk' example over to Ansible for DevOps repository

As the title says; related upstream issue is geerlingguy/ansible-for-devops#196 — basically, that way I can add automated test coverage more easily (I have things structured for it in the book repo), and I'll be more likely to maintain it in perpetuity.

Not going to rename for now, since it does use Logstash still, just with Filebeat pushing the logs to Logstash instead of Logstash Forwarder.
