If you want to make your vnc log file available to the docker host, map a volume - but make sure you 'touch ./vnc.log' first, otherwise docker will create a folder!

The filename in the container is determined by the HOSTNAME
of the container, so you'll need to set that to something known if you wish to access the logs.
