Convert into long-lived daemon process, or create a CronJob

This tool is really useful for one-shot dumps of data.

However, given quay.io only retains one month of logs, and given the amount of time it takes to retrieve these logs for large repos, we should consider converting this exporter to be long-lived and/or scheduled by a CronJob to ensure we don't miss any info.
