remove metadata from snakefile examples & code before including in book

#10 adds a test runner that finds & runs the various tests, but some of the snakefiles now have metadata in them (e.g. ignore, expect_fail, targets). these should probably be stripped out before inclusion in book...
one simple way to do this would be include blocks. probably better than doing this generically... 🤔
