Debian stretch is very old and stale, buster is also quite stale, but is the current stable tracking branch and is much fresher than stretch.

Update Dockerfile from stretch-slim to stable-slim
Describe alternatives you've considered
Updating to testing-slim as Debian testing is what most Debian-based OSes track instead of stable.
