I haven't tested this on Linux or Mac yet, but I'd like to, and I'd like to make sure everything's working perfectly in both those OSs.

Seems to work perfectly in Mac OS X Snow Leopard. You still have to use php git-deploy, I assume because the default PHP location in OS X is not the same as the location in the shebang in git-deploy. I wonder if it'll be the same in Linux.

Works fine on Linux with PHP 5.3.3

PS: Thanks a lot, git-deploy-php is really useful (was about to write something similar myself till I found your script).

I'm quite glad to hear that! If you need anything, let me know. I haven't done much work on it lately because it works for me the way it is, but if you need anything I'd gladly throw it in.
