I use /Applications/ITK-SNAP.app/Contents/MacOS/ITK-SNAP [options] [main_image]
to load image.
- Is it possible to load a certain slice of a nii.gz file using the itksnap command line?
- Also, if I have a mask, is there a simple way to convert label2 to label1?

The closest to what you are looking for is the key | (vertical bar) that
toggles between layouts.
There is no option from command line to load a specific slice of a NIFTI
file
To replace a label with another label, you can use the 3D scalpel tool. See
towards the end of this tutorial:
