linux: currently need to pin gdk-pixbuf up to exact build

Due to an issue that is kind of both a bug in conda build and an unclean build of gdk-pixbuf I resorted to pin gdk to the last working build on linux to version 2.36.12 haf2c3b9_1004). When either one of the referenced issues is resolved, we can remove the pin
